Grandma’s Chicken & Dumplings.

This has always been and always will be one of my favorite foods.  My Grandma has been cooking this since before I was born and this recipe has been in my family for more years than anyone would like to admit. [pardon the low resolution picture, I took it from my iphone]

1 medium whole chicken- cut into pieces (ex. breasts, thighs etc..) Keep the meat on the bone!
1 Large onion- cut into large chunks (you are going to remove them later so keep them big so they are easy to take out)
1/4 cup medium or long grain rice. Make sure that you do not buy instant rice. Uncle Ben’s is not an okay rice to use for this dish
5 medium potatoes- cut into medium size chunks
1/4 teaspoon garlic powder
1 1/2 teaspoon salt (you may need to add more in the end to taste)
1/2 teaspoon pepper
2 cups bisquick
2/3 cup+ 1-2 Tablespoons milk

1.Place chicken in a large stockpot (the one I use is 8 quarts). Cover the chicken 3/4 of the way with water- do not completly submerge the chicken.  Add large onion pieces.
2.Cook COVERED on the stove over medium low heat for three hours or until the chicken is falling off the bone
3. Remove the onions. Do not discard any of the liquid.  Remove the chicken from the pan and de-bone.  CAUTION: The chicken is going to be very hot.  When we de-bone our chicken we wear plastic diswashing gloves which helps with the heat
4. Place the chicken back in the pan with the water
5. Add salt, pepper, garlic powder, rice, and potatoes.  Cook another 20 min on medium heat
5. In a medium mixing bowl mix the bisquick and milk.  You are going to drop this into the chicken water 1 dumpling at a time.  Each dumpling should be about the size of a tennis ball.
6. Cook 10 min uncovered and then an additional 15-20 minutes covered.

note: After we serve this we like to add extra salt, pepper, and butter to the dumplings but that is up to you 😀
