Red Velvet Cake

This is by far my favorite Red Velvet Cake recipe. This time I actually had red food coloring (the last time I made this I had to use blue food coloring and my husband forever refers to them as “smurf cakes”)  Let me just tell you that this recipe is FABULOUS! Make it into a cake, cupcakes, whatever you feel like just MAKE IT! I am also including my favorite cream cheese frosting recipe.

1 1/4 cup flour
3/4 cup sugar
1/2 t baking soda
1/2 t cocoa powder (the unsweetened cooking kind)
3/4 cup canola oil (if you use vegtable oil that’s ok)
1/2 cup buttermilk
1 egg (beat in seperate bowl before combining with the rest of the wet ingredients)
1 T red food coloring (or any color of your choosing)
1/2 teaspoon vinegar
1/2 teaspoon vanilla
Preheat your oven to 350. Then line your muffin pan with liners or grease your cake pan.  In a medium mixing bowl you need to combine all the dry ingredients (flour, sugar, baking soda, and cocoa powder).  Then in a large mixing bowl combine all the wet ingredients- make sure you already beat the egg BEFORE adding it to the wet mixture.  Slowly add the entire dry mixture to the wet mixture.  Then use an electric mixer or a whisk to thoroughly combine all ingredients.   Bake for 20-25 minutes.  While these are baking you can prepare your cream cheese frosting.
8 ounces cream cheese (AT ROOM TEMPERATURE- don’t try to melt this yourself just set it out about 4 hours before you want to start cooking, you also need to set out the butter)
8 T unsalted butter (also at ROOM TEMPERATURE)
1/2 teaspoon vanilla extract
1-2 cups powdered sugar( this depends on what consistency you want for the frosting so start with 1 cup and then increase based on how thick/thin you want your frosting)
1 T maple syrup (try to use pure maple syrup if you can) 
Combine all frosting ingredients in a large mixing bowl and mix by hand with a whisk.  Once your cupcakes have cooled frost each cupcake & ENJOY!
