Not your average baked potato soup.

Okay so there are 2348978924753 recipes on the net for Baked Potato Soup. We know this. But this is the best! Okay so maybe i’m biased? Mine has a twist approved by myself AND my husband (he is not easy to please in the food department).

Feeds 2-5 people (2 with leftovers)

Ingredients:
4-5 large potatoes
4 Tablespoons unsalted butter
1/2 cup flour (split)
6 cups milk (if your feeding a large family add more)
4 teaspoons salt (you may want to add more in the end to taste)
1 teaspoon pepper (more or less to taste)
3 Tablespoons Old Bay seasoning (this is what makes it different & delicious)
1 cup shredded chedder cheese
1/2 cup sour cream (optional)

Preheat your oven to 400. Stick the potatoes on a cookie sheet and bake them for one hour. Do not remove the skin! When the potatoes are done cooking wait for them to cool a bit and then cut them in half and scoop the insides into a small mixing bowl.  Now is your opportunity to take out all the agression you have due to your not so nice coworker, that upcoming deployment, or the child who colored on your television with Sharpie.  Smash those potatoes! 🙂  When you feel better about the week you have had get out your stock pot and melt the butter.  When the butter is melted and 3 cups of milk and the flour. Let that cook on LOW for about 3-5 minutes.  Then add the rest of the milk and the cheese.  Let that cook for about another 5 minutes and then add your seasonings (salt, pepper, and old bay).  If you are adding sour cream now is the time to do it.  Serve & enjoy =] I added some extra cheese on the top because I can & it was yummy!
