Banana Espresso Chocolate Chunk Bread/Muffins

I know why can’t I just be normal right? And make plain banana bread? Lol If that’s what you want simply omit the espresso & chocolate chips- but I think they are delish! [I made two 1/2 loaves which is why this image looks a little funny, that and when i flipped it out of the loaf pan it was still warm so it broke. Oops!]


1 1/2 cups flour
1-2 teaspoons espresso powder (I found this in the coffee section and as you will see the label is in spanish, i’m not sure what the english version is but if you used any finely grounded espresso roast i would think that’s okay) or just omit this is you don’t like coffee 🙂
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2 large ripe or overripe bananas (mashed- once again you can take out your anger on the food!)
1/2 cup granulated sugar (that’s the plain white kind)
1/2 cup brown sugar
8 tablespoons unsalted butter (i melt mine for about 30 sec in the microwave)
1/4 cup milk
1 egg
1/3 cup mascarpone cheese( this is in the gourmet cheese/deli section it’s a soft sweet cheese & it really adds to the bread/muffins you need to have it at room temperature but i do NOT reccomend microwaving it! it will seperate)
1 cup chocolate chunks (optional)


Preheat your oven to 350. If you are making muffins line your pan with muffin liners, if you are making a loaf grease it with cooking spray. In a small bown mix the flour, espresso powder, baking powder, and salt.  In a medium mixing bowl mix the bananas, sugars, butter, milk, egg,  and cheese.  You are going to combine the wet and dry ingredients now but i reccomend doing this by hand. I can tell you from experience that if you try to use an electric mixer you will make a giant mess which is not fun to clean up 😦 Once all ingredients are combined fold in the chocolate chunks. 

Baking Time:
Muffins: 25 minutes
Loaf: 1 hour

p.s. I split the batter and just made 2 loaves instead of one big one. If you make one big one you will probably need to adjust the baking time.  Cook it until the fork you stick in comes out clean =]
